		<description>a cure is more often referred to a preservation method. a curing salt will often include nitrites and sometimes nitrates. it will give the meat the pinkish look as oppose to greyish color.
cold smoking is when you apply smoke sans heat. so you literally have a box full of smoke without any heat.
i think you can apply any rub you choose to any meat. Have you considered brining your pork butt (perhaps with some pineapple juice). The osmosis will keep your pork moist and succulent. You can dry rub after brining (perhaps with some molasses), and hot smoke it to develop a nice crust. Star Anise are wonderful aroma enhancers in beef and pork.</description>
